  • 4 large red apples, cored, cut into wedges










  • 40g butter, chopped










  • 2 tbsp maple syrup










  • Thick custard, extra, to serve

  • 450g (3 cups) self-raising flour










  • 50g chilled butter, cut into 1cm pieces










  • 1 red apple, peeled, cored, coarsely grated










  • 250ml (1 cup) milk










  • 60ml (1/4 cup) thick custard









  • Select all ingredients










5 Method Steps






  • Preheat oven to 220C/200C fan forced. Grease a shallow baking dish. Place the apple, butter and maple syrup in the prepared dish. Toss to combine. Bake, stirring occasionally, for 20-30 minutes or until soft and golden. Set aside to cool slightly.





  • Lightly flour a baking tray. To make the scones, place the flour in a large bowl. Use your fingertips to rub in the butter until the mixture resembles coarse breadcrumbs. Stir in the grated apple. Make a well in the centre and pour in the milk and custard. Use a flat-bladed knife to stir until dough just comes together (it will be quite a wet dough).

  • Turn the dough out onto a floured surface. Knead gently until dough is smooth, sprinkling with a little more flour as necessary. Press out to a 2.5cm-thick disc. Use a 6.5cm round cutter to cut out scones (cut as close together as possible). Very gently re-roll the dough scraps to cut out more scones (you should have 12).





  • Place scones close together on the prepared tray. Bake for 12-15 minutes or until risen and golden. Transfer to a wire rack to cool.





  • Serve topped with the apple compote and extra custard.
