  • 3/4 cup firmly packed brown sugar










  • 1 tsp vanilla extract

  • 1 1/4 cups plain flour










  • 1/4 cup cocoa powder










  • Pinch salt










  • 1/2 tsp bicarbonate of soda










  • 300g dark chocolate, chopped

  • Place kale in a food processor. Process until very finely chopped.





  • Using an electric mixer, beat butter, sugar and vanilla until pale and creamy. Add egg. Beat to combine.





  • Sift flour, cocoa, salt and bicarbonate of soda over butter mixture. Stir until just combined. Add kale and 2/3 of the chocolate. Using hands, knead dough in the bowl until well combined.





  • Using 1 tablespoon of mixture at a time, roll mixture into balls. Place balls, 5cm apart, on prepared trays. Using the heel of your hand, flatten balls slightly. Press remaining chocolate into tops of rounds.





  • Bake, swapping trays after 8 minutes, for 12 minutes or until just firm. Stand on trays for 5 minutes. Transfer to a wire rack to cool completely. Serve.
