13 Ingredients
215g (1 cup) caster sugar
750ml (3 cups) shiraz
2 x 2cm-wide strips orange rind
1 whole cinnamon stick
1 vanilla bean, split
6 William Bartlett or Packham pears
Double cream, to serve

150g (1 cup) plain flour
85g butter, chilled, chopped
55g (1/4 cup) brown sugar
45g (1/4 cup) hazelnuts
20g (1/4 cup) desiccated coconut

4 Method Steps
Combine the caster sugar, shiraz and 250ml (1 cup) water in a large saucepan. Stir over low heat until the sugar dissolves. Add the orange rind, cinnamon and vanilla seeds and bean. Peel the pears, leaving the stems intact and trimming the bases slightly so they stand upright. Arrange the pears upright in the pan.
Cover and bring to a simmer over medium-low heat. Tilt the lid slightly to leave a gap of about 2cm. Reduce heat to low and cook, gently turning pears occasionally so they cook and colour evenly, for 1 hour or until tender.
Meanwhile, to make the crumble, preheat the oven to 180C/160C fan forced. Line 1 large or 2 small baking trays with baking paper. Place all the crumble ingredients in a food processor. Process in short bursts until the butter is incorporated and the mixture starts to clump together. Spread evenly over the prepared tray/s in a single layer. Bake for 10 minutes. Stir and drag the mixture from the edges into the centre and vice versa. Bake for a further 5 minutes or until light golden. Set aside to cool.
Use a slotted spoon to lift the pears from the pan and place on a tray or plate. Reserve 500ml (2 cupfuls) of the poaching liquid, discarding the remaining liquid or reserving for another use (see top left). Return the reserved liquid to the pan. Bring to the boil over medium heat. Cook for 20 minutes or until reduced by about three-quarters or to 125ml (1 ⁄2 cupful). Transfer to a bowl and set aside to cool. 5 Use a pastry brush to brush some cooled syrup over the pears. Divide crumble among serving plates. Place a pear in the centre. Serve with cream and remaining syrup.
