  • 255g (11/4 cups), firmly packed light brown sugar,

  • 125ml (1/2 cup) vegetable oil










  • 250ml (1 cup) buttermilk










  • 225g (11/2 cups) self-raising flour










  • 50g (1/2 cup) cocoa powder










  • 2 x 200g pkt original Tim Tams










  • Double thick cream, to serve


  • Ganache










  • 180g milk chocolate, finely chopped










  • 125ml (1/2 cup) thickened cream










  • 20g butter









  • Select all ingredients










5 Method Steps






  • Preheat oven to 180C/160C fan forced. Grease a 20cm square cake tin. Line with baking paper.





  • For the ganache, place the chocolate in a bowl. Heat the cream and butter in a small saucepan over medium-low heat until just simmering. Pour over chocolate. Set aside for 5 minutes to cool slightly. Use electric beaters to beat the cream mixture until well combined. Cover. Place in the fridge to chill for 2 hours.





  • Use electric beaters to beat the eggs, sugar, vanilla, and oil until pale and creamy. Add the buttermilk. Sift flour and cocoa powder over the egg mixture and beat until combined.
