  • 50g salted butter, chopped










  • 100g (1/2 cup) brown sugar










  • 125ml (1/2 cup) honey










  • 1 egg, lightly whisked










  • 300g (2 cups) plain flour










  • 75g (1/2 cup) self-raising flour










  • 2 tsp ground cinnamon










  • 2 tsp ground ginger










  • 1 tsp ground cloves










  • 1/2 tsp bicarbonate of soda










  • Bought white royal icing, to decorate










  • Lolly snakes, to decorate










  • Big chocolate stars, to decorate









  • Select all ingredients

  • Melt butter with sugar and honey in a small saucepan over low heat. Cool. Combine butter mixture and egg in a bowl. Stir in flours, cinnamon, ginger, cloves and bicarb.

  • Turn onto a lightly floured surface and knead until smooth. Divide the dough into 2 discs and cover with plastic wrap. Place in the fridge for 1 hour to rest.





  • Preheat oven to 180C/160C fan forced. Line 2 baking trays with baking paper. Use a lightly floured rolling pin to roll out gingerbread dough on a large sheet of baking paper until 4-5mm thick. Use thong template to cut thong shapes from dough, rerolling trimmings. Transfer dough shapes to prepared trays. Make 3 holes in each dough shape as shown on template. Bake for 10-12 minutes or until light golden. Set aside on trays for 5 minutes to cool slightly then transfer to a wire rack to cool completely.





  • Make royal icing following packet directions then transfer to a piping bag. Use icing to attach lolly snakes between holes to create straps and chocolate stars to decorate. Pipe dots of icing round biscuit edge. Set aside for 20 minutes to set.
