5 Method Steps
Grease a 27cm x 17cm rectangle slice pan. Line with baking paper.
Place biscuits in food processor and process until mixture resembles coarse crumbs. Add butter and process until combined. Transfer to prepared pan. Use a flat-bottomed glass to press the mixture evenly over the base. Place in the fridge to chill for 30 minutes.
Combine custard powder, 55g (1/4 cup) caster sugar and 125ml (1/2 cup) milk in a saucepan over medium-high heat. Stir in remaining milk and 250ml (1 cup) cream. Cook, whisking continuously, until mixture comes to the boil. Boil for 1 minute. Remove from heat. Set aside to cool completely.
Place cream cheese and remaining sugar in a food processor and process until smooth. Add custard and process until combine. Pour over biscuit base. Place in the fridge to chill for 2 hours or until set.
Place the chocolate, oil, half the Mars Bars and remaining cream in a medium heatproof bowl over a saucepan of simmering water (make sure the bowl doesn’t touch the water). Use a metal spoon to stir occasionally until the chocolate melts and mixture is smooth. Pour over custard. Scatter over remaining Mars Bars. Place in the fridge to chill for 1 hour or until set.
