  • 125g plain sweet biscuits










  • 168g pkt (contains 8 individual pkts) pocky strawberry










  • 100g butter, melted










  • 200g white chocolate, finely chopped










  • 1 tsp gelatine powder










  • 500g cream cheese, at room temperature, chopped










  • 70g (1/3 cup) caster sugar










  • Pink gel food colouring, to tint









  • Select all ingredients










5 Method Steps






  • Place the biscuits and the contents of 5 small packets of pocky in a food processor and process until finely crushed. Add the butter and process until combined. Transfer to an 11 x 34cm (base measurement) rectangular fluted tart tin with a removable base. Use a flat-bottomed glass to press and evenly spread mixture over the base and up the sides of the tin. Place in the fridge for 30 minutes to chill.

  • Use electric beaters to beat the cream cheese and sugar in a bowl until smooth. Add the chocolate, gelatine and colouring, and beat until combined. Spoon into the base and use the back of a spoon to smooth the surface. Place in the fridge for 1 hour to chill.





  • Remove the slice from the tin. Decorate the slice with remaining pocky. Serve.
