  • 1 large cauliflower, cut into florets










  • 3 bacon rashers, finely chopped










  • 1 leek, pale section only, thinly sliced










  • 150g blue cheese, coarsely chopped










  • 50g butter










  • 1/4 cup (35g) plain flour










  • 2 cups (500ml) milk










  • 1/2 cup (60g) coarsely grated cheddar

  • Preheat oven to 200°C. Cook the cauliflower in a saucepan of boiling water for 5 mins or until just tender. Drain well. Transfer to a 6-cup (1.5L) ovenproof dish.





  • Heat a frying pan over medium heat. Add the bacon and leek and cook, stirring, for 5 mins or until the leek softens and bacon is light golden. Arrange the leek and bacon over the cauliflower in the dish. Sprinkle with half the blue cheese.





  • Melt the butter in a saucepan over medium-high heat. Add the flour and cook, stirring, for 2 mins or until the mixture bubbles and thickens slightly. Add the milk and use a balloon whisk to stir until smooth. Cook, stirring constantly, for 5-6 mins or until the sauce boils and thickens. Remove from heat. Add the cheddar and remaining blue cheese and stir until the cheese melts and mixture is smooth. Season to taste. Pour the hot sauce evenly over the cauliflower mixture in the dish.





  • Bake for 15 mins or until cauliflower mixture is golden brown and heated through. Serve immediately.
