  • 150g sausage mince










  • 1 small carrot, peeled, grated










  • 1 small zucchini, grated










  • 2 garlic cloves, crushed










  • 25g packet Mexican spice mix










  • 125g (1/2 cup) refried beans










  • 2 eggs, lightly whisked










  • 4 sheets puff pastry, partially thawed










  • 175g packet cheese corn chips, lightly crushed










  • 20g (1/4 cup) finely grated parmesan










  • Chunky tomato salsa, to serve










  • Sour cream, to serve










  • Chopped fresh coriander leaves, to serve (optional)









  • Select all ingredients










4 Method Steps






  • Preheat oven to 210C/190C fan forced. Line 2 large baking trays with baking paper. Combine beef and sausage mince in a large bowl. Add the carrot, zucchini, garlic, spice mix, beans and half the egg. Season and mix well to combine. Divide the mixture into 4 portions

  • Cut 1 pastry sheet in half. Brush lightly with egg. Join the two short ends, pressing lightly to seal. Place one portion of the mince mixture in a long sausage shape down one long side. Roll up to enclose the filling. Coil into a snail shape, tucking the end under to seal. Place on prepared tray. Repeat with the remaining pastry, egg and mince mixture.





  • Brush the rolls with egg. Top with corn chips. Bake for 35-40 minutes or until golden and cooked through.





  • Sprinkle the sausage rolls with parmesan and serve with salsa, sour cream and coriander, if using.
