  • 1 bunch rhubarb (6 stalks), trimmed, cut into 5cm lengths










  • 21/2 cups frozen mixed berries










  • 1 granny smith apple, peeled, cored, cut into 8 wedges










  • 2 tbsp caster sugar










  • 1 tbsp cornflour










  • 25g butter, melted










  • 2 tbsp toasted flaked coconut










  • Vanilla ice-cream, to serve


  • Coconut Dumplings










  • 1 cup self-raising flour










  • 50g butter, chilled, chopped










  • 2 tbsp caster sugar










  • 1/4 cup desiccated coconut










  • 165ml can coconut milk









  • Select all ingredients










4 Method Steps






  • Preheat oven to 200C/180C fan-forced. Combine rhubarb, frozen berries, apple, sugar, cornflour and 1 tablespoon water in a large bowl. Place fruit mixture in a 10-cup-capacity oval ovenproof dish. Cover with 2 layers of foil. Bake for 10 minutes or until fruit begins to soften.

  • Remove foil. Brush dumplings with melted butter. Bake for a further 15 minutes or until dumplings are golden and berry mixture starts to bubble. Stand for 10 minutes. Sprinkle with coconut. Serve with ice-cream.
