  • 125g butter, chopped, at room temperature










  • 155g (3/4 cup, firmly packed) brown sugar










  • 1 tsp vanilla extract, plus 1/2 tsp, extra










  • 225g (1 1/2 cups) plain flour










  • 30g (1/4 cup) malted milk powder










  • 2 tbsp milk










  • Pinch of salt










  • 190g (1 cup) dark choc chips










  • 3 tsp gelatine powder










  • 155g (3/4 cup) caster sugar










  • 60g dark choc melts, melted










  • 30g pretzels, lightly crushed

5 Method Steps






  • Line the base and 2 long sides of an 18 x 28cm (base measurement) slice pan with baking paper, allowing the sides to overhang.





  • Use electric beaters to beat the butter, sugar and vanilla in a bowl until pale and creamy. Add the flour, milk powder, milk and salt. Use a large metal spoon to stir until a soft dough forms (if the mixture is too firm, add a little more milk). Stir in the choc chips. Press into the prepared pan.





  • Place 60ml (1/4 cup) cold water in a heatproof bowl. Sprinkle over the gelatine powder. Stand in a saucepan of simmering water. Stir until dissolved.





  • Use electric beaters to beat the sugar, extra vanilla and 60ml (1/4 cup) cold water in a bowl. Beat for 3 minutes or until sugar is dissolved. Gradually beat in the warm gelatine mixture. Beat on high for about 4 minutes or until thick and fluffy.





  • Quickly spread the marshmallow over the cookie dough. Drizzle with melted chocolate and sprinkle with pretzels. Place in the fridge to chill for 1 hour or until set. Cut into pieces.
