  • 2 x 124g pkts Lotus Biscoff biscuits










  • 100g butter, melted










  • 3 tsp gelatine powder










  • 300ml thickened cream










  • 750g cream cheese, chopped, at room temperature










  • 155g (3/4 cup) caster sugar










  • 200g Lotus Biscoff spread










  • 2 tbsp warm water









  • Select all ingredients










4 Method Steps






  • Grease the base and side of a 6cm-deep, 22cm springform pan and line with baking paper. Place the biscuits in a food processor and process until fine crumbs form. Add the butter and process until combined. Use the back of a spoon to press the biscuit mixture evenly over the base of the prepared pan. Place in the fridge until required.





  • Place 2 tablespoons water in a small microwave-safe bowl. Sprinkle with the gelatine and stir to combine. Microwave on High for 10 seconds (do not overheat). Use a fork to whisk until the gelatine dissolves. Set aside to cool slightly.

  • Meanwhile, reserve 2 tablespoons thickened cream. Place the cream cheese and sugar in a clean food processor. Process until smooth. Gradually add the remaining thickened cream and process until combined. Add the cooled gelatine mixture and process until combined. Pour the mixture over the biscuit base.





  • Place the Biscoff spread, warm water and reserved cream in a bowl. Stir until smooth. Place tablespoons of the biscoff mixture over the top of the cheesecake. Use a small skewer or flat-bladed knife to swirl the mixture around and into the top of the cheesecake. Place in the fridge for 6 hours or overnight, until set. Transfer the cheesecake to a plate. Slice and serve.
