14 Ingredients
1 tbsp extra virgin olive oil
1 large brown onion, finely chopped
3 large garlic cloves, crushed
4 sprigs fresh thyme, plus extra, to serve
750g pork and veal mince
185ml (3/4 cup) red wine
1L tomato passata
375ml (11/2 cups) Massel chicken style liquid stock
18 (about 300g) dried lasagne sheets
8 eggs, hard-boiled, peeled, sliced
600g mozzarella, thinly sliced
70g (1 cup) finely grated parmesan
Salad leaves, to serve
Select all ingredients
4 Method Steps
Heat the oil in a large saucepan over medium-high heat. Add the onion and cook, stirring, for 5 minutes or until soft. Add the garlic and thyme and cook for a further 1 minute or until aromatic. Add the mince and cook, breaking up any lumps with the back of a wooden spoon, for 5 minutes, until well browned. Add the wine and cook, stirring, for 2-3 minutes or until the wine reduces slightly. Add the passata and stock and bring to a simmer. Cook, stirring occasionally, for 15 minutes or until the sauce thickens slightly. Remove the thyme stalks.
Preheat oven to 180C/160C fan forced. Spoon 1 cup of the mince mixture over the base of a 7cm-deep, 22 x 32cm ovenproof dish to lightly cover. Cover with one-third of the lasagne sheets, slightly overlapping. Top with one-third of the remaining mince mixture, then one-third of the ham, one third of the egg and one third of the mozzarella. Repeat the layers, finishing with a layer of mozzarella.
Pour 1 cup water evenly over the top of the lasagne. Cover with baking paper, then foil. Bake for 40 minutes.
Remove foil and paper from the lasagne. Sprinkle with the parmesan and bake for 30-35 minutes or until the top is golden. Top with extra thyme sprigs and serve with salad leaves.
