  • 1 tbsp extra virgin olive oil










  • 1 large brown onion, finely chopped










  • 3 large garlic cloves, crushed










  • 4 sprigs fresh thyme, plus extra, to serve










  • 750g pork and veal mince










  • 185ml (3/4 cup) red wine










  • 1L tomato passata










  • 375ml (11/2 cups) Massel chicken style liquid stock










  • 18 (about 300g) dried lasagne sheets










  • 400g shaved ham










  • 8 eggs, hard-boiled, peeled, sliced










  • 600g mozzarella, thinly sliced










  • 70g (1 cup) finely grated parmesan










  • Salad leaves, to serve









  • Select all ingredients










4 Method Steps






  • Heat the oil in a large saucepan over medium-high heat. Add the onion and cook, stirring, for 5 minutes or until soft. Add the garlic and thyme and cook for a further 1 minute or until aromatic. Add the mince and cook, breaking up any lumps with the back of a wooden spoon, for 5 minutes, until well browned. Add the wine and cook, stirring, for 2-3 minutes or until the wine reduces slightly. Add the passata and stock and bring to a simmer. Cook, stirring occasionally, for 15 minutes or until the sauce thickens slightly. Remove the thyme stalks.





  • Preheat oven to 180C/160C fan forced. Spoon 1 cup of the mince mixture over the base of a 7cm-deep, 22 x 32cm ovenproof dish to lightly cover. Cover with one-third of the lasagne sheets, slightly overlapping. Top with one-third of the remaining mince mixture, then one-third of the ham, one third of the egg and one third of the mozzarella. Repeat the layers, finishing with a layer of mozzarella.

  • Pour 1 cup water evenly over the top of the lasagne. Cover with baking paper, then foil. Bake for 40 minutes.





  • Remove foil and paper from the lasagne. Sprinkle with the parmesan and bake for 30-35 minutes or until the top is golden. Top with extra thyme sprigs and serve with salad leaves.
