In-season sweet roasted beetroot meets creamy fetta and walnuts in this delicious tart your guest will drool over.

12 Ingredients
1 tbsp olive oil
2 tsp red wine vinegar
2 tsp finely chopped rosemary
100g fetta, crumbled
1/2 cup (55g) walnuts, toasted, coarsely chopped
Balsamic glaze, to serve
Pastry
1 1/3 cups (200g) plain flour
1 tsp salt
1 tsp fresh thyme leaves
100g chilled unsalted butter, cubed
2 tbsp chilled water

6 Method Steps
Preheat oven to 180C. Line a baking tray with baking paper. Lightly grease six 10cm round fluted tart tins with removable bases. Place beetroot on the lined tray. Roast for 45 -50 mins or until tender. Set aside to cool slightly. Wearing gloves to avoid staining your hands, peel the beetroot. Coarsely grate into a bowl. Add oil and vinegar. Season. Stir to combine
To make pastry, place flour, salt and thyme int a food processor. Add butter and process until mixture resembles breadcrumbs. Add the chilled water and process until dough just comes together. Turn dough onto a lightly floured surface and shape into a disc. Wrap dough in plastic wrap. Place in the fridge for 30 mins to chill.
Divide dough into 6 even portions. Roll out each dough portion on a lightly floured surface until 3-5mm thick. Line base and sides of prepared tins with pastry. Trim excess pastry. Use a fork to prick bases. Place pastry cases in the fridge for 20 mins to chill.
Line each pastry case with baking paper and fill with pastry weights or rice. Bake for 10 mins. Remove paper and weights or rice. Bake for a further 10 mins or until pastry is light golden and crisp. Set aside to cool completely.
Add rosemary and half the fetta and walnut to the beetroot mixture in the bowl. Season. Toss gently to combine. Divide among tart shells. Sprinkle with remaining fetta and walnut. Bake for 10 mins or until heated through.
Serve drizzled with balsamic glaze.
