  • 2 x 100g Toblerone bars, plus extra pieces, to serve










  • 200g butter, chopped, plus extra, melted, to grease










  • 100g (1/2 cup) brown sugar










  • 2 eggs










  • 150g (1 cup) self-raising flour










  • Vanilla ice-cream, to serve

  • Chop 1 Toblerone and combine with the butter, sugar and 60ml (1/4 cup) water in a small saucepan. Stir over low heat until melted and smooth. Transfer to a bowl and set aside to cool to room temperature.





  • Add the eggs to the Toblerone mixture and whisk to combine. Sift in the flour and fold until just combined. Spoon the mixture evenly among prepared ramekins. Break the remaining Toblerone into pieces. Press 2 pieces into the centre of each pudding (1 piece point up and 1 point down).





  • Place the ramekins on a baking tray and bake for 20 minutes or until set but still a bit wobbly in the centre. Hold a ramekin with a dry tea towel and carefully run a knife around the edge to loosen. Repeat with remaining ramekins. Turn puddings onto serving plates. Serve immediately with ice-cream and extra Toblerone pieces.
