20 Ingredients












  • 1 tbsp extra virgin olive oil










  • 500g 4 star beef mince










  • 1 large red onion, sliced










  • 3 garlic cloves, finely chopped










  • 2 celery stalks, chopped










  • 1 large carrot, chopped










  • 1 tbsp finely chopped fresh oregano leaves










  • 40g sachet Coles Mexican seasoning










  • 2 long red chillies










  • 2 long green chillies










  • 410g can tomato puree










  • 1 1/2 cups beef stock










  • 425g can mexe beans


  • Cheesy Cornbread Dumplings










  • 1 1/2 cups plain flour










  • 1 cup polenta










  • 1 tbsp baking powder










  • 1 1/2 cups buttermilk










  • 1 cup grated cheddar










  • 1/3 cup grated parmesan










  • 1/4 cup finely chopped flat-leaf parsley leaves, plus extra chopped to serve









  • Select all ingredients










4 Method Steps






  • Preheat oven to 200C/180C fan-forced. Heat the oil in a large heavy-based flameproof casserole dish over medium-high heat. Add mince. Cook, breaking up lumps with a wooden spoon, for 6 minutes or until browned.





  • Add onion, garlic, celery, carrot and oregano to dish. Cook for 5 minutes or until vegetables have just softened. Add seasoning. Stir to combine. Add chillies, tomato puree, stock and 1/2 cup water. Bring to a simmer. Reduce heat to medium. Simmer, uncovered, for 10 minutes or until mixture thickens slightly. Add beans. Cook for a further 5 minutes or until beans are heated through. Season with salt and pepper.





  • Make Cheesy Cornbread Dumplings Place all ingredients in a large bowl. Stir to combine. Roll mixture into 16 balls. Place on mince mixture. Bake for 20 minutes or until dumplings are golden and cooked through.





  • Serve sprinkled with extra parsley.
