  • 1 cup buckwheat flour










  • 1/3 cup brown sugar










  • 5 1/4 cups desiccated coconut










  • 2/3 cup coconut oil, melted










  • 1/2 cup frozen cherries, thawed










  • 320g can sweetened condensed coconut milk (see notes)










  • 200g packet red glacé cherries, thinly sliced


  • Topping










  • 200g dairy-free dark chocolate, chopped (see notes)










  • 1 tbsp coconut oil









  • Select all ingredients










4 Method Steps






  • Preheat oven to 180°C/160°C fan-forced. Grease an 18cm x 28cm slice pan. Line base and sides with baking paper, extending paper 2cm above edges of pan.





  • Place buckwheat flour, brown sugar, ¼ cup desiccated coconut and ½ the coconut oil in a bowl. Stir until well combined. Press coconut mixture evenly over the base of prepared pan. Bake for 20 minutes. Set aside to cool





  • Place thawed cherries in a small food processor. Process until smooth. Place remaining desiccated coconut in a large bowl. Add condensed coconut milk, glacé cherries, cherry purée and remaining coconut oil. Stir until well combined. Spoon cherry mixture over base in pan. Using the back of a spoon, spread mixture out evenly and press firmly to compact. Refrigerate for 1 hour.





  • Make Topping- Place chocolate and coconut oil in a microwave-safe bowl. Microwave on HIGH (100%), stirring halfway through, for 1 minute or until melted and smooth. Working quickly, pour chocolate mixture over cherry mixture, spreading to cover to the edges. Stand at room temperature for 1 hour or until set. Cut into bars. Serve.
