  • 2 cups self-raising flour










  • 150g sweet potato, unpeeled, grated










  • 60g sliced honey mustard ham, finely chopped










  • 2/3 cup grated vintage cheddar










  • 1/3 cup grated parmesan










  • 1/4 cup chopped fresh chives










  • 1/3 cup extra virgin olive oil










  • 1 cup buttermilk










  • 3 tsp wholegrain mustard










  • 1 egg










  • 1 tbsp panko breadcrumbs









  • Select all ingredients










4 Method Steps






  • Preheat oven to 200C/180C fan-forced. Line a baking tray with baking paper. Line a 12-hole (1/3-cup-capacity) muffin pan with paper cases.





  • Place cauliflower on prepared tray. Spray with oil. Bake for 15 minutes or until light golden. Cool for 10 minutes.
