180g butter, at room temperature
480g caster sugar
1 tsp orange zest
6 eggs
600g (4 cups) plain flour
3 tsp baking powder
60g (heaped 1/2 cup) almond meal
180g (1 cup) dried figs
200g (1 1/4 cups) almonds

It’s best to make the dough the day before, and refrigerate it overnight. In a food processor, cream together the butter, sugar and orange zest. Add the eggs and pulse until creamy. In a bowl, stir together the flour, baking powder, almond meal and a pinch of sea salt. Add the mixture from the food processor and, with your hands, slowly knead it all together to form a dough. Finely chop the figs and the almonds and add them to the dough. Cover with plastic wrap and refrigerate overnight.
Mould the dough into 5 logs, then refrigerate for at least 20 minutes, while preheating the oven to 160C/140C fan forced.
Place the logs on an oiled baking tray and bake for about 15 minutes or until golden brown. Take out of the oven and leave to cool a little. Turn the oven down to 100C/80C fan forced.
Slice the logs on an angle into oval biscuits, about 1cm thick. Arrange on 2-3 oiled baking trays lined with baking paper and dry them out in the oven for about 10 minutes, until firm.
To check the firmness, remove one biscuit and let it cool for 2 minutes. If it snaps, it’s ready, and you can take the others out.
Keep in an airtight container for up to 2 weeks.
