10 Ingredients
100g butter, softened
1/2 cup (110g) caster sugar
1 Coles Australian Free Range Egg
1 cup (120g) almond meal
1/4 cup (35g) plain flour
1 tsp almond essence (optional)
1 sheet ready-rolled puff pastry
4 firm just-ripe plums, stoned, thinly sliced crossways
1/4 cup (20g) flaked almonds
1 tbsp caster sugar, extra
Select all ingredients
4 Method Steps
Preheat oven to 200C. Line a baking tray with baking paper.
Use an electric mixer to beat the butter and sugar in a bowl until pale and creamy. Add the egg and beat until well combined. Add the almond meal, flour and almond essence, if using, and stir to combine.
Place the pastry on a clean work surface. Cut into 4 squares. Place on the lined tray. Prick the pastry squares all over with a fork. Spread the almond mixture evenly over each pastry square, leaving a 1cm border. Arrange the plum slices over the almond mixture. Sprinkle with flaked almonds and extra sugar.
Bake for 20-25 mins or until pastry is golden brown and puffed. Serve warm or at room temperature.
