  • 2 tbsp maple syrup










  • 115g (3/4 cup) plain flour










  • 45g (1/4 cup, lightly packed) brown sugar










  • 1 1/2 tsp ground ginger










  • 100g butter, chilled, chopped










  • 30g (1/2 cup) flaked coconut










  • 200g frozen blackberries, thawed


  • Vanilla cheesecake cream










  • 125g spreadable cream cheese










  • 60ml (1/4 cup) milk










  • 2 tbsp caster sugar










  • 1/4 tsp vanilla bean paste

5 Method Steps






  • reheat oven to 200C/180C fan forced. Cut the pears in half lengthways and carefully remove the cores. Place the pears, cut side up, in a 23 x 33cm roasting pan or baking dish. Brush with 1 tablespoon maple syrup. Bake for 15-20 minutes or until the pears are just beginning to soften.





  • Meanwhile, combine the flour, sugar and ginger in a large bowl. Use your fingertips to rub in the butter until the mixture resembles coarse crumbs. Stir in the flaked coconut.





  • Remove the pan from the oven and place a few blackberries in the centre of each pear. Scatter any remaining berries over the pan. Brush the pears with the remaining 1 tbs maple syrup and sprinkle with the crumble mixture. Bake for 20 minutes or until the crumble is golden and the pears are just tender, but still holding their shape.





  • For the vanilla cheesecake cream, place cream cheese, milk, sugar and vanilla in a bowl and stir to combine.





  • Spoon the cheesecake cream into serving bowls. Top with the pear and berry crumble. Drizzle with extra pan juices, if you like.
