100ml olive oil
300g (about 15) brussels sprouts, trimmed, halved
100g (1/2 cup) French green lentils
2 tbsp sherry vinegar or red wine vinegar
1 tsp Dijon mustard
1/4 cup chopped fresh continental parsley
1/2 bunch purple kale, leaves torn
85g (1/2 cup) natural sliced almonds
Select all ingredients
5 Method Steps
Preheat oven to 200C/180C fan forced. Drizzle 1 tablespoon oil over a large baking tray. Place in the oven for 10 minutes or until oil is hot.
Cut the cauliflower into 4 thick slices and place on the hot baking tray. Scatter the brussels sprouts over the cauliflower. Drizzle 1 tablespoon oil over the vegetables and season. Roast for 30 minutes or until vegetables are golden and starting to char on the edges.
Meanwhile, place the lentils in a saucepan and add enough cold water to cover. Bring to the boil over high heat. Reduce the heat to low and cook for 10 minutes or until just tender, yet slightly firm to the bite. Drain well and place in a bowl.
Combine vinegar, mustard, parsley and remaining 60ml (1/4 cup) olive oil in a small bowl. Add half the dressing to lentils. Toss to coat
Spoon the lentil mixture in and around the roasted vegetables. Scatter over the kale and almonds. Roast for a further 8-10 minutes or until the almonds are golden and the kale is crisp. Serve drizzled with the remaining dressing.
