  • 185g butter, chopped, at room temperature










  • 255g (1 1/4 cups, firmly packed) brown sugar










  • 2 eggs










  • 1 tsp vanilla extract










  • 225g (1 1/2 cups) plain flour










  • 1 tsp baking powder










  • 100g white chocolate, melted










  • Sprinkles, to serve


  • Marshmallow topping










  • 215g (1 cup) caster sugar










  • 3 tsp gelatine powder










  • 1 egg white










  • 1 tsp vanilla extract









  • Select all ingredients










6 Method Steps






  • Preheat oven to 180C/160C fan forced. Grease a 26 x 16cm (base measurement) slice pan and line with baking paper, allowing the sides to overhang.





  • Use electric beaters to beat the butter and sugar in a bowl until pale and creamy. Add the eggs 1 at a time, beating well after each addition. Beat in the vanilla. Sift the flour and baking powder over the mixture and fold to combine. Spread evenly into the prepared pan and bake for 25 minutes or until firm and golden. Set aside to cool completely in the pan.





  • For the marshmallow topping, place the sugar and 125ml (1/2 cup) water in a small saucepan. Stir over low heat until the sugar dissolves. Increase the heat to medium and simmer, without stirring, for 10 minutes or until reduced and syrupy.





  • Meanwhile, place 2 tablespoons water in a small heatproof bowl. Sprinkle with the gelatine and stir until well combined. Place the bowl inside a larger heatproof bowl. Pour boiling water into the larger bowl until it reaches halfway up the side of the smaller bowl. Set aside, stirring occasionally, for 5 minutes or until the gelatine dissolves.





  • When the syrup is almost ready, use electric beaters to beat the egg white in a bowl until soft peaks form. With the beaters running, gradually pour the hot syrup onto the egg white. Add the gelatine mixture and vanilla. Beat for 10 minutes until white, fluffy and cooled. Spread the marshmallow mixture over the cake base. Set aside for 1 hour for the marshmallow to set.

  • Use the paper to lift the slice from the pan. Use a large knife dusted with cornflour to cut into squares (clean the knife and dust with cornflour between cuts, as needed).
