Cinnamon sugar
1/3 cup (75g) brown sugar
3/4 tsp ground cinnamon
Streusel
2/3 cup (150g) plain flour
1/3 cup (75g) brown sugar
1/4 tsp ground cinnamon
75g unsalted butter, frozen, coarsely grated
1/2 tsp sea salt flakes
Cake
1 2/3 cups (250g) plain flour
1 1/4 tsp baking powder
1/2 tsp bicarbonate of soda
1/2 tsp sea salt flakes
3/4 cup (165g) caster sugar
90g unsalted butter, softened
3 extra-large Coles Australian Free Range Eggs
1 1/4 tsp pure vanilla extract
2 pomelos, segmented
Candied Citrus (see notes), to serve

6 Method Steps
Preheat oven to 165°C (145°C fan-forced). To make the cinnamon sugar, in a small bowl, whisk sugar and cinnamon.
To make the streusel, in a medium bowl, use your fingers to mix the flour, sugar, cinnamon, butter and salt until small clumps form. Squeeze to form larger clumps. Freeze the streusel for 10 mins or until firm.
To make the cake, grease a 12cm x 23cm loaf pan. Line with baking paper, extending over long sides. In a medium bowl, whisk flour, baking powder, bicarbonate of soda and salt. In a large bowl, using an electric mixer, beat sugar and butter on medium speed for 3 mins or until light and fluffy. Add eggs, 1 at a time, beating well after each addition. Beat in vanilla, then sour cream. Add the flour mixture and beat on low speed until just blended.
Spoon 1 1/4 cups batter into the prepared pan. Smooth top. Sprinkle over half the cinnamon sugar. Top with another 1 1/4 cups batter. Smooth top. Sprinkle over remaining cinnamon sugar. Top with remaining batter. Smooth top. Sprinkle over the streusel mixture and gently press it into the batter.
Bake for 1 1/4 hours or until a skewer inserted into the centre comes out with some moist crumbs (but not batter) attached and the streusel is golden. Cool in the pan for 20 mins. Use paper to gently lift cake from pan and transfer to a wire rack to cool.
In a small bowl, toss pomelo segments with 2 tablespoons of the candied citrus syrup. Serve with the cake, candied citrus and remaining syrup.
