  • 450g pkt unfilled rectangular sponge cake slabs










  • 230g (2/3 cup) strawberry jam, plus extra, to decorate










  • 300ml ctn thickened cream, whipped, plus extra, to decorate










  • 450g (3 cups) icing sugar










  • 80ml (1/3 cup) boiling water










  • Red food colouring, to tint










  • 130g (1 1/2 cups) desiccated coconut









  • Select all ingredients










5 Method Steps






  • Use a serrated knife to trim the brown crust from the sponge slabs. Cut each slab in half horizontally to create 4 sponge pieces.





  • Spread the jam over 2 sponge pieces. Spread the whipped cream over the remaining 2 sponge pieces. Sandwich the sponges together. Cut each sponge sandwich in half lengthways and then across into 8 to create 16 rectangles.





  • Sift the icing sugar into a large bowl. Add the water and stir to combine. Add enough colouring to tint the icing pink.





  • Spread the coconut over a plate. Use 2 forks to carefully dip a sponge piece into the icing to coat. Allow excess icing to drain. Carefully roll the sponge in the coconut, patting to coat. Transfer to a wire rack. Repeat with the remaining sponge pieces, icing and coconut. Set aside for 30 minutes to set.





  • Cut a 1cm-wide strip lengthways out of the centre of each lamington top. Place extra jam and cream into separate piping bags. Pipe the cream into the gap on top of each lamington. Pipe the jam on top of the cream.
