13 Ingredients
11/4 cups self-raising flour
50g butter, chilled, chopped
1/3 cup Dutch-processed cocoa, sifted
1/4 cup caster sugar
2/3 cup buttermilk
1 tsp vanilla extract
Thickened cream, to serve
Icing sugar, to dust
Baileys Chocolate Sauce
3/4 cup firmly packed brown sugar
1/4 cup Dutch-processed cocoa
1 tbsp cornflour
1/3 cup Baileys Irish Cream
40g butter

4 Method Steps
Preheat oven to 200C/180C fan-forced.
Make Baileys Chocolate Sauce: Combine sugar, cocoa powder and cornflour in a 5cm-deep, 22cm round (base) ovenproof pan. Stir in Irish cream, butter and 11⁄2 cups water. Cook, stirring, over medium-high heat for 3 minutes or until sauce boils and thickens slightly. Remove pan from heat.
Sift flour into a bowl. Using your fingertips, rub in butter until mixture resembles fine breadcrumbs. Stir in sifted cocoa and caster sugar. Make a well. Whisk buttermilk and vanilla together in a jug. Add to flour mixture. Using a flat-bladed knife, stir until a soft dough forms. Turn out onto a lightly floured surface. Knead gently until just smooth. Pat into a 2cm-thick, 17cm round. Using a 4cm round cutter, cut dough into 12 rounds, re-rolling dough trimmings. Place rounds in sauce in pan. Cover with a tight fitting lid or 2 layers of foil.
Bake for 20 minutes or until dumplings are puffed and cooked through. Drizzle with cream and dust with icing sugar. Serve.
