  • 250g butter, softened










  • 1 1/4 cups firmly packed brown sugar










  • 1/4 cup caster sugar










  • 1 tsp vanilla extract










  • 2 1/4 cups plain flour










  • 1/2 tsp table salt










  • 400g dark chocolate, finely chopped

  • Preheat oven to 180C/160C fan-forced. Grease a 7.5cm-deep, 17cm x 23.5cm base (12-cup-capacity) baking dish.





  • Make Edible Chocolate Chip Cookie Dough: Using an electric mixer, beat butter, sugars and vanilla until pale and creamy. Sift flour and salt over butter mixture. Stir until just combined. Add chocolate. Using hands, knead dough to evenly distribute the chocolate (see notes).





  • Whisk milk, cream, eggs and vanilla together in a large jug. Place 1/2 the brioche slices over base of prepared dish. Crumble 1⁄2 the cookie dough over bread. Repeat with remaining brioche slices and cookie dough. Pour egg mixture over bread. Set aside for 20 minutes to soak.
