22 Ingredients
250g packet choc ripple biscuits
250g butter, melted
1 cup brown sugar
2/3 cup plain flour
1/3 cup self-raising flour
1/4 cup cocoa powder, sifted
1/2 cup desiccated coconut
1/4 cup milk
1 egg, lightly beaten
2 tsp vanilla extract
Darrell Lea Orange bb’s balls, to decorate
Darrell Lea mint bb’s balls, to decorate
M&M’s, to decorate
M&M’s minis, to decorate
Assorted sprinkles, to decorate
Red writing icing
Yellow writing icing
Icing
1/4 cup cocoa powder, sifted
2 1/2 cups icing sugar mixture
10g butter, softened
2 1/2 tbsp boiling water
Blue gel food colouring
Select all ingredients
5 Method Steps
Preheat oven to 180C/160C fan-forced. Grease a 20cm x 30cm lamington pan. Line base and sides with baking paper, extending paper 2cm above edges of pan.
Place biscuits in a food processor. Process until fine crumbs. Add half the melted butter. Process until combined. Press mixture over base of prepared pan. Set aside.
Combine sugar, flours, cocoa and coconut in a bowl. Add milk, egg, vanilla and remaining melted butter. Mix well. Spread mixture over prepared base. Bake for 35 minutes or until top is just firm. Cool completely.
Make Icing Combine cocoa and 2 cups icing sugar in a bowl. Add butter and 2 tablespoons boiling water. Stir until mixture is smooth and combined, adding a little extra boiling water if needed. Spread over top of slice. Place remaining icing sugar in a small bowl. Add enough remaining boiling water to form a smooth drizzling consistency. Tint dark blue with food colouring. Drizzle top of slice with blue icing.
Decorate top of slice with assorted lollies and sprinkles including bb’s balls. Using picture as a guide, pipe writing icing onto bb’s balls to resemble planets. Set aside for 2 hours to set. Cut into squares. Serve.
