  • 400g small orange sweet potatoes, unpeeled










  • 175g butter, softened










  • 1 cup caster sugar










  • 2 tsp vanilla extract










  • 2 eggs










  • 2 cups self-raising flour










  • 1/4 tsp salt










  • 1/2 cup milk










  • 1 tbsp finely grated orange rind










  • 2 tbsp orange juice










  • 1 tbsp cocoa powder, sifted


  • Jaffa Ganache










  • 200g block dark chocolate, chopped










  • 1/4 cup thickened cream










  • 1 tbsp orange juice









  • Select all ingredients

  • Place sweet potato on a microwave-safe plate. Prick all over with a fork. Microwave on HIGH (100%) for 6 minutes or until tender. Set aside for 5 minutes or until cool enough to handle. Peel and discard skin. Transfer to a food processor. Process until smooth. Set aside to cool.

  • Meanwhile, preheat oven to 180C/160C fan-forced. Grease a 7cm-deep, 10cm x 21cm (base) loaf pan. Line base and sides with baking paper, extending paper 2cm above edges of pan on all sides.





  • Using an electric mixer, beat butter, sugar and vanilla until pale and creamy. Add eggs, one at a time, beating well after each addition. Sift flour and salt over butter mixture. Stir until just combined.





  • Divide mixture among 3 bowls. Add 1/4 cup milk, orange rind and juice to 1 portion. Stir to combine. Add cocoa, 1⁄4 cup sweet potato purée and remaining milk to another portion. Stir to combine. Add remaining sweet potato purée to last portion. Stir to combine (mixtures should have a similar consistency).





  • Place alternate spoonfuls of mixtures into prepared pan, tapping base of pan on a flat surface to settle mixture. Using a bamboo skewer, gently swirl mixtures together to create a marbled effect. Smooth surface. Bake for 1 hour or until a skewer inserted in centre of loaf comes out clean (cover loosely with foil if over-browning during cooking). Stand loaf in pan for 10 minutes. Turn out onto a wire rack to cool completely.





  • Make jaffa ganache. Place chocolate, cream and juice in a small microwave-safe bowl. Microwave on HIGH (100%), stirring with a metal spoon every 30 seconds, for 1 minute to 1 minute 30 seconds or until melted and smooth. Set aside for 30 minutes to thicken.





  • Spread loaf with jaffa ganache. Serve.
