  • 2 tsp vanilla extract










  • 1/4 cups caster sugar










  • 4 eggs










  • 125g butter, chopped










  • 2 cups plain flour










  • 350g white chocolate, coarsely chopped

  • Preheat the oven to 160C/140C fan forced. Lightly grease a shallow, square 23cm slab pan. Line with baking paper, allowing the sides to overhang.





  • Place the butter and 200g chocolate in a large heatproof bowl over a saucepan of simmering water (make sure the bowl doesn’t touch the water). Use a metal spoon to stir until the chocolate has melted and the mixture is smooth. Set aside to cool slightly.

  • Sift the flour into a large bowl. Stir in the chocolate mixture and 100g of the remaining chocolate. Spoon mixture into prepared pan. Bake for 35-40 minutes or until crumbs cling to a skewer inserted into the centre. Set aside, still in the pan, to cool.





  • Melt the remaining 50g chocolate and drizzle over the blondie. Top with rows of freckles. Remove from the pan and cut into 18 pieces to serve.
