13 Ingredients
150g (1 cup) plain flour
125g butter, chopped
60g (1/3 cup) icing sugar mixture
3 tsp vanilla bean paste
60ml (1/4 cup) boiling water
3 tsp gelatine powder
140g (2/3 cup) caster sugar
600ml carton thickened cream
125g strawberries, hulled, chopped, plus extra, halved, to serve
Pink food colouring, to tint
Mini vanilla meringues, to serve (see note)
1 tbsp crushed freeze-dried strawberries

6 Method Steps
Preheat the oven to 180C/160C fan-forced. Grease a 3cm deep, 20 x 30cm lamington pan and line with baking paper
Place the flour, butter, icing sugar and 1 teaspoon vanilla bean paste in the bowl of a food processor and process until the mixture resembles fine breadcrumbs. Turn out onto a work surface. Bring the mixture together with your hands. Press the mixture into the base of the prepared pan. Bake for 15 minutes or until light golden. Set aside to cool.
Meanwhile, place the boiling water in a small heatproof jug. Sprinkle the gelatine powder into the jug. Stir until the gelatine dissolves. Set aside for 5 minutes to cool.
Clean the bowl of the food processor. Process the cream cheese, caster sugar and remaining vanilla in the food processor until combined. With the motor running, gradually add 300ml cream until combined. With the motor still running, add the gelatine mixture until just combined. Pour half the mixture onto the cooled base. Place in the fridge for 1 hour or until set.
Add the chopped strawberries and a few drops of food colouring to the remaining cream mixture in the food processor. Process until smooth. Pour the mixture into the pan. Place in the fridge for 3 hours or until set.
Whip the remaining 300ml cream until soft peaks form. Transfer the whipped cream to a piping bag with a plain 2cm nozzle. Remove the slice from the pan. Pipe cream over the top of the slice. Decorate with meringues and extra halved strawberries. Sprinkle with crushed freeze-dried strawberries. Cut into slices to serve.
