  • 4 Pink Lady or Jazz apples










  • 1 Granny Smith apple, peeled, cored, finely chopped










  • 1/4 cup (55g) brown sugar










  • 2 tbsp lemon juice










  • 1 tsp ground cinnamon










  • 1/2 tsp ground nutmeg










  • 2 tsp cornflour










  • 1 sheet frozen shortcrust pastry, just thawed










  • Cinnamon sugar, to dust










  • Cream or ice-cream, to serve

4 Method Steps






  • Core each whole apple (don’t cut all the way through). Score a line around centre and cut 1cm from top of each apple. Scoop out flesh, leaving a 1cm-thick shell.





  • Place apple flesh and chopped apple, sugar, lemon juice, cinnamon and nutmeg in a saucepan over medium heat. Stir for 5 mins or until apple is soft.





  • Combine cornflour and 1 tablespoon cold water in a small bowl. Add to apple mixture and stir for 2-3 mins or until mixture thickens. Set aside to cool.





  • Place apple shells on a lined baking tray. Spoon cooled apple mixture among each shell. Cut pastry into 5mm-wide strips on a clean work surface. Arrange in a lattice pattern. Use a 5cm round cutter to cut lattice into 4 discs. Place 1 disc over each apple. Sprinkle with cinnamon sugar. Bake at 180°C for 20-25 mins or until pastry is golden. Serve with cream or ice cream.
