  • 3 overripe bananas, peeled










  • 100g butter, at room temperature










  • 185ml (3/4 cup) buttermilk










  • 2 eggs










  • 375g (2 1/2 cups) self-raising flour










  • 50g (1/3 cup) plain flour










  • 200g (1 cup, firmly packed) brown sugar










  • 1 tsp ground cinnamon


  • Roasted white chocolate glaze










  • 180g white chocolate, finely chopped










  • 80ml (1/3 cup) pouring cream









  • Select all ingredients










4 Method Steps






  • Preheat oven to 180º/160ºC fan forced. Line a 6.5cm deep, 12 x 27cm (base measurement) loaf pan with baking paper.





  • Place the banana, butter, buttermilk and eggs in a food processor and process until well combined. Add the flours, sugar and cinnamon and process, occasionally scraping down the side, until well combined. Pour into prepared pan. Bake for 1 hour or until a skewer inserted in the centre comes out clean. Remove from the oven and set aside for 5 minutes before transferring to a wire rack to cool slightly.

  • Meanwhile, reduce oven temperature to 140ºC/120ºC fan forced. Place chocolate in a shallow baking tray. Bake for 10 minutes. Stir with a spatula to spread and melt on the tray. Bake for a further 10 minutes until the chocolate turns a rich caramel colour. The chocolate may look grainy but continue to mix and it will melt and eventually become smooth. Add the cream to the tray and stir until almost combined. Bake for a further 5 minutes. Remove from the oven and stir until well combined and smooth.





  • Drizzle the roasted white chocolate glaze over the banana bread to serve.
