  • 2 cups plain flour, plus extra for dusting










  • 3 tsp baking powder










  • 1 tsp caster sugar










  • 1 1/4 cups cooked mashed gold sweet potatoes










  • 1/4 cup light extra virgin olive oil










  • 1/3 cup milk










  • 1 egg, lightly beaten










  • 200g sliced triple-smoked ham










  • 2/3 cup grated tasty cheese










  • Olive oil spray










  • 6 cherry tomatoes, quartered










  • 50g fetta, crumbled, plus extra to serve










  • Small fresh basil leaves, to serve









  • Select all ingredients










4 Method Steps






  • Preheat oven to 200C. Grease a 12-hole (1/3-cup capacity) muffin pan.





  • Combine flour, baking powder and sugar in a large bowl. Make a well. Whisk sweet potato, oil, milk and egg in a separate bowl. Add potato mixture to flour mixture. Stir to combine. Turn out onto a floured surface. Gently press out to form a 25cm x 35cm (about 1cm-thick) rectangle.





  • Top dough with ham. Sprinkle with tasty cheese. Working from 1 long side, roll up dough to enclose filling. Cut into 12 slices. Place one slice, cut-side up, in each prepared hole. Top with tomato and fetta. Spray with oil. Bake for 20 minutes or until lightly golden. Cool in pan for 2 minutes.





  • Sprinkle with extra fetta and basil. Serve warm or at room temperature.
