  • 315g (1 1/2 cups) caster sugar










  • 500g butter, at room temperature, cut into 2cm pieces

  • Combine egg whites and sugar in a large heatproof bowl. Place over a saucepan of simmering water (making sure the bowl doesn’t touch water) and cook, stirring occasionally with a large spoon, for 4 minutes or until mixture is hot to the touch. To test, transfer a small amount to a saucer and if mixture is hot to the touch, it is ready.
