11 Ingredients












  • 1/3 cup milk










  • 3 chai tea bags










  • 1 1/2 cups self-raising flour










  • 2/3 cup caster sugar










  • 2 eggs, lightly beaten










  • 1/4 cup vegetable oil










  • 1 cup mashed banana (see notes)










  • 1/2 cup skinless hazelnuts, chopped










  • 1/2 cup traditional rolled oats










  • 1/4 cup honey, plus extra to serve










  • Butter, to serve (optional)

4 Method Steps






  • Preheat oven to 180C/160C fan-forced. Grease a 6cm-deep, 9cm x 19cm (base) loaf pan. Line base and all sides with baking paper, extending paper 5cm above edge of pan on long sides.





  • Place milk in a heatproof jug. Microwave on HIGH (100%) for 30 seconds or until hot. Place two tea bags in the hot milk. Set aside for 5 minutes to steep.





  • Meanwhile, combine flour and sugar in a large bowl. Tear open remaining tea bag and add tea to flour mixture. Mix well. Remove and discard steeped tea bags from milk, squeezing and extracting as much liquid as possible. Add egg and oil. Stir to combine. Add milk mixture to flour mixture. Stir until combined. Stir in mashed banana.





  • Pour mixture into prepared pan. Bake for 40 minutes. Combine hazelnuts, oats and honey in a bowl. Remove banana bread from oven. Gently press hazelnut mixture onto banana bread. Bake for 20 minutes or until a skewer inserted into the centre of bread comes out clean. Stand in pan for 30 minutes. Transfer to a wire rack lined with baking paper to cool. Serve warm or cold, with butter, if using, and extra honey.
