  • 1/4 cup caster sugar










  • 1 1/3 cups milk










  • 1/2 tsp vanilla bean paste










  • 2 tbsp semolina










  • 1 1/2 tbsp cornflour










  • 1 egg










  • 8 sheets filo pastry










  • 60g unsalted butter, melted










  • Roughly chopped pistachio kernels, to serve


  • Spiced honey syrup










  • 1 cup sugar










  • 2 tsp lemon juice










  • Pinch ground cinnamon










  • 2 tsp honey

  • Combine sugar and 1 cup milk in a saucepan over medium-high heat. Bring to the boil. Remove from heat. Stir in vanilla.

  • Combine semolina, cornflour, egg and remaining milk in a heatproof bowl. Whisk until smooth. Slowly add hot milk mixture to semolina mixture, whisking constantly, until smooth and combined. Return custard to saucepan. Place over low heat. Cook, stirring with a wooden spoon, for 5 minutes or until thickened. Do not boil. Remove from heat. Spoon custard into a heatproof bowl. Cover surface with plastic wrap. Refrigerate for 3 hours or until cold.





  • Preheat oven to 180C/160C fan-forced. Lightly grease a large baking tray. Place 1 sheet of filo on a flat surface. Lightly brush with melted butter. Repeat layering with 3 more sheets. Cut filo stack into 6 squares. Place heaped tablespoons of custard in the centre of each pastry square. Bring up sides of filo and pinch firmly together to enclose filling and form a pouch. Place pouches on prepared tray. Brush with melted butter. Repeat with remaining filo, butter and custard.





  • Bake for 30 minutes or until golden and crisp. Stand for 5 minutes. Transfer to a heatproof serving dish with sides.





  • Make Spiced Honey Syrup: Combine sugar, lemon juice, cinnamon, honey and 1/2 cup water in a small saucepan over medium-low heat. Cook, stirring, for 3 minutes or until sugar dissolves. Increase heat to medium-high. Bring to the boil. Boil, without stirring, for 4 to 5 minutes or until syrup is light golden.





  • Slowly pour hot syrup over hot dumplings. Sprinkle with pistachios. Serve.
