11 Ingredients
3 cups plain flour
1 tbsp baking powder
1 1/2 cups caster sugar
1 1/2 cups milk
125g butter, melted, cooled
3 eggs
3 tsp vanilla extract
250g jar raspberry jam
1/2 x 350g jar hundreds and thousands
Icing
3 cups icing sugar mixture
Pink liquid food colouring
Select all ingredients
6 Method Steps
Sift flour and baking powder into a large bowl. Stir in sugar. Make a well.
Whisk milk, butter, eggs and vanilla in a large jug. Add to well. Whisk to combine.
Preheat a jaffle maker. Spoon 1/4 cup batter into each hole. Close lid. Cook for 5 minutes or until golden and just firm to touch. Transfer doughnuts to a wire rack. Repeat with remaining batter.
Spoon jam into a piping bag fitted with a 1cm-round plain nozzle. Push the nozzle into the top of each doughnut to form a hole and pipe jam into holes (see note).
To make the icing, whisk the icing sugar with 2 tablespoons warm water until mixture is smooth and a thick spreadable consistency. Tint pink with food colouring.
Place hundreds and thousands in a shallow bowl. Spoon 2 teaspoons icing on the top of each doughnut and spread with a warm knife to cover. Press doughnut in hundreds and thousands. Return to rack. Set aside for 20 minutes or until icing is set. Serve.
