12 Ingredients
1 cup plain flour
1/2 cup traditional rolled oats
1/3 cup firmly packed brown sugar
125g butter, softened
2/3 cup milk
1 tbsp cornflour
3 eggs
2/3 cup caster sugar
1 tsp mixed spice
2 cups pecan halves, roughly chopped
Icing sugar, to dust

Place pumpkin in a steamer basket set over a medium saucepan of simmering water. Cook, covered, for 20 minutes or until tender. Set aside to cool. Once cool, transfer to a food processor. Process until smooth. Set aside.
Preheat oven to 200C/180C fan-forced. Grease a 20cm x 30cm lamington pan. Line base and sides with baking paper, extending paper 5cm above edges of pan on all sides.
Combine flour, oats and brown sugar in a bowl. Add butter. Stir until mixture forms a crumbly dough. Press mixture evenly over base of prepared pan. Bake for 15 minutes or until light golden. Set aside to cool slightly.
Meanwhile, whisk milk and cornflour in a bowl. Whisk in eggs, caster sugar, mixed spice and pumpkin purée until smooth and combined. Pour pumpkin mixture over pastry base in pan. Top with pecans. Bake for 35 to 40 minutes or until set. Cool in pan. Refrigerate overnight or until set. Cut into pieces. Serve dusted with icing sugar.
