13 Ingredients
10 sheets filo pastry
5 eggs
200g fresh ricotta
2 tbsp chopped fresh chives
2 tbsp chopped fresh mint
80g (1/2 cup) frozen peas, thawed
50g (1/3 cup) frozen shelled edamame, thawed
100g sugar snap peas, some halved lengthways
2 green shallots, chopped
35g (1/3 cup) grated colby cheese
Snow pea tendrils, to serve
Mixed salad leaves, to serve (optional)
Select all ingredients
3 Method Steps
Preheat oven to 210C/190C fan forced. Lightly grease a 3cm-deep, 26 x 34cm baking tray. Place a sheet of filo pastry on the tray, pressing it into the edges. Spray liberally with oil. Top with a second sheet of pastry. Continue layering with remaining filo and oil. Scatter quinoa over the filo.
Whisk the eggs, ricotta, chives and mint in a bowl. Season. Pour mixture over the quinoa. Sprinkle evenly with peas, edamame and sugar snaps. Top with shallot and cheese. Bake for 30 minutes or until puffed and golden. Set aside to cool slightly.
Top with snow pea tendrils, if using. Serve with mixed salad leaves.
