17 Ingredients
105g (3/4 cup) pecans
225g (11 ⁄2 cups) self-raising flour
155g (3⁄4 cup) caster sugar
1/2 tsp ground cinnamon
1⁄2 tsp mixed spice
1/2 tsp bicarbonate of soda
210g (1 1/2 cups) carrots, peeled, coarsely grated
95g (1/2 cup) raisins, coarsely chopped
2 eggs, lightly whisked
160ml (2 ⁄3 cup) vegetable oil
250ml (1 cup) thickened cream
175ml (3⁄4 cup) double cream
Sea salt flakes, to serve
Cheesecake
155g (3 ⁄4 cup) caster sugar
2 tsp vanilla extract
2 eggs

5 Method Steps
Preheat the oven to 180C/160C fan forced. Grease a 22cm (base measurement) springform pan. Line the base and side with baking paper, allowing paper to extend 2cm above the side.
To make cheesecake, use electric beaters to beat cream cheese, sugar and vanilla in a bowl until smooth. Beat in eggs until combined.
To make the carrot cake, coarsely chop 70g (1/2 cup) of the pecans. Place in a large bowl. Add the flour, sugar, cinnamon, mixed spice and bicarb. Mix until well combined. Stir in the carrot and raisins. Add the eggs and oil. Stir to combine.
Spoon two-thirds of the carrot cake mixture into the prepared pan. Spoon over half the cheesecake mixture. Spoon over the remaining carrot cake mixture. Top with the remaining cheesecake mixture. Bake for 50-60 minutes or until the filling is set and lightly browned. Turn off oven. Leave the cake in the oven, with the door slightly ajar, for 2 hours or until cooled slightly. Place in the fridge for 3 hours to cool completely.
Use electric beaters to beat the thickened and double cream together in a bowl until firm peaks form. Spread over the cake. Coarsely chop the remaining pecans and sprinkle around the edge of the cake. Sprinkle the pecans with a little salt to serve
