  • 1 tbsp extra virgin olive oil










  • 1 brown onion, finely chopped










  • 3 garlic cloves, crushed










  • 750g beef mince










  • 1 zucchini, coarsely grated










  • 1/2 cup frozen peas










  • 1 egg, lightly beaten










  • 1/2 cup dried breadcrumbs










  • 2 tbsp barbecue sauce










  • 1 tbsp worcestershire sauce










  • 1 tbsp dijon mustard










  • 1/4 cup chopped fresh flat-leaf parsley leaves










  • 1/2 cup coarsely grated cheddar










  • 1 1/2 cups gravy, to serve










  • 300g green beans, steamed, to serve


  • Pumpkin mash topping










  • 400g butternut pumpkin, peeled, chopped










  • 500g desiree potatoes, peeled, chopped










  • 25g butter, chopped










  • 2 tbsp milk

  • Heat oil in a small frying pan over medium-high heat. Cook onion, stirring, for 5 minutes or until softened. Add garlic. Cook, stirring, for 1 minute or until fragrant. Remove from heat. Set aside to cool for 10 minutes.

  • Meanwhile, make Pumpkin Mash Topping: Place pumpkin and potato in separate saucepans. Cover with cold water. Bring to the boil. Boil, uncovered, for 12 to 15 minutes or until tender. Drain. Mash potato. Add butter and milk. Season with salt and pepper. Mash pumpkin until smooth. Cover to keep warm.





  • Preheat oven to 180C/160C fan-forced. Grease a 4.5cm-deep, 20cm square cake pan. Line base and sides with baking paper, extending paper 3cm above the edges of the pan. Place mince, zucchini, peas, egg, breadcrumbs, barbecue and worcestershire sauces, mustard, parsley and onion mixture in a large bowl. Season with salt and pepper. Mix well to combine. Spoon mixture into prepared pan, pressing with the back of a spoon to level.





  • Bake for 30 minutes or until browned. Remove from oven. Increase temperature to 200C/180C fan-forced. Spoon mashed potato and mashed pumpkin alternately on top of meatloaf. Using the back of a spoon swirl mixtures together. Sprinkle with cheese. Bake for 25 minutes or until potato is golden. Stand meatloaf in pan for 10 minutes. Lift onto a plate. Serve meatloaf with gravy and beans.
