14 Ingredients












  • 1 tbsp olive oil










  • 4 Coles RSPCA Approved Australian Chicken Marylands (or 1.4kg chicken pieces on the bone)










  • 1 brown onion, finely chopped










  • 1 leek, white part only, thinly sliced










  • 2 celery sticks, finely chopped










  • 1 large carrot, peeled, finely chopped










  • 4 bacon rashers, finely chopped










  • 2 garlic cloves, crushed










  • 400g can lentils, rinsed, drained










  • 1 1/2 cups (375ml) chicken stock










  • 40g butter, melted










  • 2 tsp finely chopped thyme










  • 1 tsp ground paprika










  • 1 bunch silverbeet, stems trimmed, leaves finely shredded









  • Select all ingredients










3 Method Steps






  • Preheat the oven to 180°C. Heat half the oil in a large flameproof roasting pan over medium-high heat. Season the chicken. Add chicken to the pan and cook for 5 mins each side or until golden. Transfer to a plate.





  • Heat the remaining oil in the pan. Add the onion, leek, celery, carrot, bacon and garlic and cook, stirring, for 5 mins or until onion softens. Add the lentils and stock. Remove from heat. Place the chicken over the lentil mixture.





  • Place the butter, thyme and paprika in a small bowl and stir to combine. Brush the chicken evenly with the butter mixture. Roast for 40 mins until the chicken is golden brown and cooked through. Add the silverbeet to the pan and toss to combine. Roast for a further 5 mins or until silverbeet just wilts.
